Description

Perfectly roasted chicken thighs in a creamy and garlicky mushroom sauce with Parmesan. You can always make me happy with any chicken dish, but this chicken with mushroom sauce was particularly delicious. I mean, except when you hate mushrooms like my children, what is there not to like? Tender chicken thighs with crispy skin, delicious mushrooms and all in a creamy sauce enriched with garlic and Parmesan. It can hardly get any better.

For the mushroom sauce:

butter (add 1 tablespoon if using a clean pan for the making the sauce)

heavy cream

some chopped parsley
