Shepherd’s pie straight from English fields
Surprisingly, the shepherd's pie is not really a pie, it's a real casserole. This dish was invented by shepherds grazing herds in English meadows many years ago. They cooked from the simplest foods that were always at hand - vegetables, potatoes, lamb or beef.
Despite the fact that many centuries have passed since then, the recipe for this delicious pie has not changed, so nowadays you can witness the exciting way of cooking.
• Ground lamb- 500 g
• Potatoes - 700 g
• Meat broth - 300 ml
• Parmesan cheese - 100 g
• Onion in the shell - 1 pcs.
• Butter - 2.5 tbsp.
• Chicken egg - 1 pc.
• Carrots - 2 pcs.
• Ground coriander - 1 tsp.
• Young garlic - 1 tooth
• Flour - 0.5 tbsp.
• Turmeric - 1,5 tsp.
• Green peas - handfuls
o A set of vegetables can be different. The main ones are onions, carrots, garlic. And only the fantasy limits the recipe.
o As for meat, it should be fatty. Since it will languish with vegetables and it is necessary that the filling was juicy. This will not work with lean meat. Previously, meat for pie was chopped, but now it is usually passed through a meat grinder. We will take ready-made ground lamb.
Step by step recipe for cooking:
Step 1: Peel the vegetables. Cut potatoes into large pieces, chop onion, divide carrots into strips, grind the garlic.
Step 2. Boil the potatoes in boiling salted water until cooked. Drain the water, mash potatoes in a puree. Add 1.5 tbsp. of butter, sprinkle with coriander and salt, and stir. Allow to cool slightly, then add the egg and mix again. Cover the mashed potatoes with a lid and set aside.
Step 3. Take a frying pan, heat the remaining butter, fry onion, carrots and garlic (2-3 min.). Add ground lamb, stir and cook over medium heat, mashing lumps with a spoon (6-7 minutes).
Step 4. Drain oil leftovers from the pan. Add flour fried in a dry frying pan and cook for 1 minute. Pour broth, stir, bring to a boil and cook for 1 minute. Reduce heat and simmer within 10 minutes. 4 minutes before the dish is done add peas.
Step 5. Grate the cheese. Pour the mashed potatoes into the pastry bag. (It is not a problem if you do not have a pastry bag at hand, - you can roll up an ordinary package and cut off the corner of the right size)
Step 6. Preheat the oven to 190 ° C. Put the stuffing in a baking dish, through cooking bag put a layer of mashed potatoes, season with cheese and bake for 50-60 minutes. Let stand 10 minutes before serving. Then place on the plates.
